Baked Vanilla Custard with Warm Cinnamon Berries

Who the hell is Justin Bieber??
Ok I know I am showing my age but it is only since the 16 year old Canadian You Tube singing sensation hit Australia that I had ever heard of him. The girls are screaming, the hormones are pumping and Justin Bieber is smiling in every paparazzi snap I see of him. And why wouldn’t you!! Not since the Beatles has there been such female frenzy.
Can anyone explain the hype???
Unfortunately this old cougar is past falling for boyish good looks.. I like a couple of wrinkles and some facial hair. Justin Bieber is as smooth skinned and sweet as my baked custard.
Baked vanilla custard with warm cinnamon berries | Serves 4-6
Ingredients Custard
2 cup single cream
1 cup full fat milk
1 vanilla bean split – seeds scraped
Or one tsp vanilla extract
2 eggs
3 egg yolks
½ cup caster sugar
Ingredients Berries
1 cup mixed frozen berries
2 cinnamon quill
½ cup water
¼ cup caster sugar
1 x 5cm strip lemon rind
Method Custard
Preheat oven to 150C. Place cream, milk and vanilla in a heavy based saucepan over high heat until the mixture comes to a boil. Remove from heat and set aside. Place eggs and extra yolks in a bowl with sugar and whisk until creamy and well combined. Gradually whisk in the hot cream mix. Strain the custard into a 1.5 ltr capacity ovenproof dish. Place the dish into a water bath (see cooks note below) and bake for 1.5 hrs or until just set. ( If you are making a number of small custards the cooking time will be less) Allow for a wobble in the centre as the custard will continue to cook for a while after it is removed from the oven. Remove from the water bath and allow to stand for 15 minutes before serving.
Method Berries
Place water, cinnamon, sugar and lemon rind in a small saucepan. Bring to a simmer over medium heat and stir until the sugar has dissolved. Cover with a lid on and lower to a gentle simmer for 10 minutes, allowing the cinnamon and lemon to infuse. Add the cup of berries and return to a simmer for 2 minutes. Turn the heat off and set aside to cool. Theses will keep in the refrigerator for up to a week.
