Muesli Slice With Oats, Seeds & Coconut

May 28th heralds the release of the much awaited (by me) Sex in The City 2. Pre sales for tickets in America are going gang busters as a legion of fans book a seat for a 'Sex And The City' joy ride. Fashion, friendship, flirting and fighting seems to be a recipe for success and I for one, am ready for a fix of Carrie, Miranda, Charlotte and Samantha's action packed NY lives.
I have attached a recipe for ladies whose lives are as busy as our Sex And The City counterparts. If you don’t have time to stop for breakfast try this muesli slice packed with oats, seeds and coconut. Just grab and run (in your Monolo Blahniks).
Muesli Slice
(20cm x 30cm slab)
Ingredients
2 cups rolled oats
1 ½ cups puffed brown rice
1/2 cup shredded coconut
1/2 teaspoon ground cinnamon
½ cup raisins
1/4 cup pepitas (pumpkin seeds)
11/4 cup sunflower seeds
1 tbsp sesame seeds
1 tablespoon cornflour (see note)
100g butter
1/3 cup honey
Method
Preheat oven to 180°C. Grease a 20cm x 30cm (base) slab pan. Line with baking paper allowing a 2cm overhang at each of the long ends. Combine oats, puffed rice, coconut, cinnamon, raisins, pepitas, sunflower seeds, sesame seeds and cornflour in a large bowl. Make a well in the centre. Place butter and honey in a small saucepan over low heat and cook until melted and bubbling. Pour hot syrup into muesli mixture. Stir to combine. Spread mixture evenly over prepared pan and press down evenly. Bake for 20-30 minutes or until crisp and golden. Remove from oven. Allow to cool in pan. Lift slice from pan. Cut into bars.
